I think the best way to make sure your workshops are making money is to look at the resources of surrounding towns and build a shop that utilizes recourses that are plentiful in the region to decrease materials cost. For example, in Khuzait you'd most likely make a wool weavery because it seems like every town produces sheep in Khuzait.

Native to native bannerlord for sure is an improvement, and it bothers me seeing people ragging on it here. These games rock. But, I do prefer my prophesy of pendor warband to bannerlord, because I feel it is a more complete experience, albeit with worse sieges, graphics, and physics.
Making money is actually quite easy, if you know what you are doing. I've had passive income up to 20k/day with caravans and workshops doing ~500/day (from 100/day - 1500/day). Lets start with the cities. Prosperity of a city determines how much it consumes and how much money it makes.

Money making has been massively nerfed around the board and likely will continue to get balancing. Bannerlord money is actually already really close to Warband. I usually played PoP mod so I might be somewhat off with these numbers, but my dyeworks/leathershops costing 10-12k would usually net me 400-600 every week.
There's a generalized formula for how much profit/loss you get for each upgrade. Recruitmient/upgrade costs change based on perks. Just plug your gold/influence per troop in up top. As a general rule at low values tier 3 troops sell for the most and tier 4 troops are profitable at high merc prices (210+).

Make 20 of em and you have half a million. Fast and easy money without killing anybody. If you want to maximize the sell value of your smithed weapons, multiply the speed * damage. This isn't the exact way that the value is calculated, but it's a good proxy for the actual formula.
The best quests for making money are: Poacher quests: Nets you extra resources. Caravan escort quests: Follow and protect a caravan as it travels. Expect a fight.
